In terms of the high temp rating the "30" rated oil would have quite a bit less viscosity at 100 degrees Centigrade than does the "50" ... based on my understanding the 50 would offer somewhat greater protection at the cost of performance and economy.
Technically the difference between SAE 30 and 50 is expressed as follows:
30 - between 9.3 and 12.5 cSt @ 100C
50 - between 16.3 and 21.9 cSt @ 100C
